Huckleberry Pudding with Hard Sauce

Ingredients

Pudding Ingredients: 

  • 1 1/2 cups flour
  • 2 tbsp butter, melted
  • 1 cup milk
  • 1 egg
  • 2 tbsp sugar
  • 1 heaping tsp baking powder
  • 1 quart huckleberries or blueberries

Hard Sauce Ingredients: 

  • 1/3 cup butter, softened
  • 1 cup brown sugar
  • 1 tsp vanilla or a little nutmeg

Directions

Pudding instructions:
Preheat oven to 350 degrees. Put 2 tbsp butter in the baking dish to melt while the oven is heating. Combine other ingredients. Pour in the butter and then fold in the berries. Return to the greased baking dish and bake for about 45 minutes or until firm. (Test with a broom straw — when nothing sticks to it, pudding is done.)

Hard Sauce Instructions: 
Cream 1/3 cup butter and brown sugar thoroughly. Add vanilla, gradually beating. Chill, then serve over hot pudding.
