Garides Saganaki, Shrimp in Tomato, Wine and Feta Cheese sauce

Ingredients

  • 4 med tomatoes or 1-1/2 c. chopped, drained canned tomatoes (reserve some juice for more sauce)
  • 1-1/2 lbs. raw shrimp
  • 4 tbsp. olive oil
  • ¼ c. chopped onion
  • ½ c. dry white wine
  • 2 tbsp  chopped Italian parsley
  • ½ tsp oregano
  • black pepper
  • 2 oz. (or more) feta cheese – do not use any kind of low-fat feta…it doesn’t melt to make a creamy sauce

Directions

Sauté onion and spices add tomatoes (if fresh tomatoes, skin and chop) and wine. Simmer until sauce is thick. Add shrimp, cook for 5-7 mins.  until done. Add feta, stir until most has dissolved.  

Optional, add feta sprinkles, parsley before serving.

Serve with loaf of fresh Italian bread
